Southern Potato Salad

Produce
  • 1 pound potatoes, peeled, cut into chunks, boiled, and drained
  • 2 tablespoons minced onion
  • 2 tablespoons diced bell pepper
  • 2 tablespoons diced celery
  • 2–3 tablespoons sweet pickle relish
  • 3 hard-boiled eggs, chopped
Dairy
  • ½ cup Greek yogurt or sour cream
Condiments & Pantry
  • 1 cup mayonnaise
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon whole grain or yellow mustard
  • 1 good pinch salt
  • 1 good pinch black pepper
  • 1 good pinch of onion powder
  • 1 good pinch garlic powder
  • 1 really good pinch paprika, plus extra for garnish

Instructions In a large bowl, combine the potatoes, onion, bell pepper, celery, relish, and eggs. In a separate bowl, whisk together the mayonnaise, Greek yogurt, vinegar, sugar, mustard, salt, pepper, onion powder, and garlic powder until smooth. Pour the dressing over the potato mixture and stir gently until everything is evenly coated. Adjust seasoning to taste, then sprinkle with paprika for color. Cover and refrigerate until well chilled before serving.

    I dont like sweet so I use dill pickles .certainly, no sugar

  4. I use red potatoes which tend to be sweeter and eliminate the sugar. I’m the official family potato salad maker. I’m good until they say make 10 pounds..then I’ll quit. LOL
