  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground allspice
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper

Instructions

Begin by preparing the escovitch vegetables. Heat 2 tablespoons of vegetable oil in a medium saucepan over medium heat. Add the red onion, bell peppers, carrots, garlic, and Scotch bonnet pepper. Cook for approximately 2–3 minutes, stirring occasionally, until the vegetables begin to soften slightly but retain their crisp texture. Add the fresh thyme, allspice berries, black peppercorns, and bay leaves, stirring for another 30 seconds to release their aromas.

Pour in the white vinegar and water, then add the granulated sugar and 1 teaspoon of kosher salt. Stir until the sugar dissolves and bring the mixture to a gentle simmer. Cook for approximately 3–4 minutes, allowing the vegetables to absorb the tangy, spicy escovitch flavors without becoming overly soft. Remove the saucepan from the heat and allow the mixture to cool slightly. The vegetables should remain vibrant, lightly crisp, and surrounded by a fragrant pickling liquid.

Arrange the sliced green tomatoes in a single layer on a paper towel-lined baking sheet. Sprinkle both sides lightly with kosher salt and allow them to rest for approximately 10 minutes. This helps draw excess moisture from the tomatoes, allowing the coating to adhere more effectively during frying. Pat the tomatoes thoroughly dry with fresh paper towels before breading.

In a shallow bowl, whisk together the flour, cornmeal, cornstarch, remaining teaspoon of kosher salt, garlic powder, onion powder, smoked paprika, ground allspice, black pepper, and cayenne pepper. In a separate shallow bowl, whisk together the eggs and buttermilk until smooth.

Working with one tomato slice at a time, dredge it in the seasoned flour mixture, shaking off any excess. Dip it into the buttermilk and egg mixture, allowing the excess to drip away, then return it to the flour mixture for a final coating. Press gently to ensure the breading adheres evenly. Transfer the coated tomatoes to a wire rack and allow them to rest for approximately 5 minutes while the frying oil heats.

Pour approximately ½ inch of vegetable oil into a large cast-iron skillet and heat over medium-high heat until the oil reaches 350°F. Carefully add the breaded tomato slices in batches, making sure not to overcrowd the skillet. Fry for approximately 2–3 minutes per side, or until the coating becomes deeply golden brown and crisp. Transfer the fried tomatoes to a wire rack set over a baking sheet and season lightly with additional kosher salt while hot.

To serve, arrange the crispy fried green tomatoes on a large serving platter, slightly overlapping the slices. Using a slotted spoon, generously spoon the warm escovitch vegetables over the tomatoes, allowing some of the colorful peppers, carrots, onions, and garlic to settle between the slices. Drizzle a small amount of the escovitch liquid over the top, being careful not to saturate the crispy coating.

Finish with freshly sliced green onions and a squeeze of lime juice. Serve immediately while the tomatoes are hot and crunchy, allowing the bright vinegar, Scotch bonnet heat, aromatic thyme, and warm allspice to contrast with the crispy cornmeal crust and tart green tomatoes.

The result is a combination of two culinary traditions: Southern fried green tomatoes and Jamaican escovitch. The tomatoes provide the crunch, while the escovitch vegetables bring acidity, heat, and freshness. It’s a dish that feels equally at home at a Southern Sunday dinner or alongside a Caribbean-inspired seafood spread.
